By law, rum is any spirit that is made from sugarcane or any of its byproducts. Generally, big rum distilleries use blackstrap molasses in the production of their rum. Blackstrap molasses is what’s left in the pot after a sugar mill has cooked down the sugar cane juice and extracted the raw sugar crystals. Blackstrap gives rum a very, very strong flavor, sometimes bitter, that usually requires several years of aging to mellow out. Instead of using substandard raw ingredients, our rum is made from raw turbinado sugar along with a small portion of grade A molasses from a sugar mill in South Louisiana, and a specialized strain of rum yeast. The rum is distilled to slightly higher proof than our whiskies and the result is a light, smooth, clean, fruity, floral rum that is ready to be bottled right away. Our rum can be used in a variety of traditional rum cocktails, or my favorite, sipped as is in a highball glass of crushed ice.
